Of all the chefs I’ve watched step into the global arena, most fall into two camps: the trailblazers chasing the new, and the traditionalists perfecting the old. While both have the tenacity to win a kitchen, there is a third type - the patriot - whose reach extends far beyond it.

The patriot’s greatest advantage isn’t innovation or mastery alone, but a pride rooted in where they come from: pots simmering on the stove; the commotion of family gathered around the table; aromas that unmistakably signal home.
