From working like clockwork in the kitchen to the rowdy nights somehow barely and forever remembered, a chef is best when they are one of many. You see, in a chef’s career, hard work is a given. If I have learned anything in my career, it is that hard work is rarely fulfilling work when it is hard work alone.

From my humble beginnings to the pinnacle of my career, I have honed the most important skill of all. To work as I relax- with presence, with flair, and with others. It was a way of work and life I didn’t think much of as a young chef. At least not until that fateful day in Cozumel when my colleagues and I stumbled into The Three Amigos Cantina, a haven tucked into Mexico’s golden stretch of the Caribbean. It was there we forged what was already a kinship in the kitchen to friendships that would last to this day even though we have since scattered across the seven seas.

I learned that day that shared work is like shared food in that it brings people together. It’s why it’s not only the name of that cantina that lives on through our Amigo jacket but its message. It is with great pride and the best of memories that the Amigo jacket was created. A jacket for the chef who works as they play with passion, towards greatness, and in good company.
